Ingredients for 4 people:

  • 325 grams of wheat flour
  • 3 eggs (L)
  • salt, white pepper
  • Nutmeg
  • 200 grams of water
  • Butter

Preparación:

  1. Put the butterfly accessory in the mixing jar.
  2. Add the flour. Season with salt and pepper and a pinch of nutmeg.
  3. Select “pastry”, speed 2, 12 minutes.
  4. While kneading, add the eggs – one at a time – through the mixing jar.
  5. When the eggs have been incorporated into the dough, gradually add the hot water through the center aperture of the jar lid.
  6. Continue the programme until you obtain a homogeneous dough.
  7. Leave the dough to hydrate for a few minutes. Remove from the mixing jar.
  8. Place the dough in a späetzle press and pour over boiling water with a pinch of salt. Wait until they rise to the surface and drain.
  9. Sauté in butter before serving.

Tips…

  • Use them as a garnish for meat stews such as Goulash.
  • Serve them au gratin with cheese.
