Ingredients:
- 2 eggs or 120 grams of milk
- 20 g lemon juice
- 10 g vinegar
- 10 g of salt
- 500 g of sunflower oil
Optional:
- 1 teaspoonful of Dijon mustard
Preparation:
- Place the eggs, lemon juice, vinegar, and salt (optional mustard) in the mixing jug. Blend at speed 10, 10 seconds.
- Uncap the mixing jug a bit (without removing it).
- Gradually pour the oil into the opening without stopping blending speed 10.
How to fix broken mayonnaise:
- Remove the mayonnaise from the mixing jug.
- Add an egg or 60 g of milk in the jug. Add a pinch of salt.
- Blend at speed 10 and proceed to pour the broken mayonnaise – little by little – just as you added the oil.
