Mayonnaise

Ingredients:

  • 2 eggs or 120 grams of milk
  • 20 g lemon juice
  • 10 g vinegar
  • 10 g of salt
  • 500 g of sunflower oil

Optional:

  • 1 teaspoonful of Dijon mustard

Preparation:

  1. Place the eggs, lemon juice, vinegar, and salt (optional mustard) in the mixing jug. Blend at speed 10, 10 seconds.
  2. Uncap the mixing jug a bit (without removing it).
  3. Gradually pour the oil into the opening without stopping blending speed 10.

How to fix broken mayonnaise:

  1. Remove the mayonnaise from the mixing jug.
  2. Add an egg or 60 g of milk in the jug. Add a pinch of salt.
  3. Blend at speed 10 and proceed to pour the broken mayonnaise – little by little – just as you added the oil.
