Ingredients for 2 people:
- 50 g of shallot or onion
- 50 g carrot
- 50 g of turnip
- 50 g zucchini
- 50 g leek
- 50 g mushrooms
- Salt, black pepper
- 400 g filleted sea bass
- 50 ml. dry white wine
- Fresh basil
- Extra virgin olive oil
Preparación:
- Put the shallot, carrot and turnip into the mixing jug, peeled and cut into large pieces.
- Crush at speed 8, 6 seconds.
- Stir in the zucchini, leek, and mushrooms. Crush at speed 8, 5 seconds.
- Cut a piece of aluminum foil twice the size of the base of the steamer. Place it on the steamer basket.
- Season the vegetables and fish with salt and pepper and arrange them on paper.
- Lay the fish over the vegetables on top of the paper.
- Carefully pour in the white wine.
- Put some basil leaves on the fish.
- Hermetically close the paper on itself so that the fish and vegetables are trapped inside.
- heat 500 g of water in the glass at speed 1, 100 degrees, with the nozzle open and the steamer on top.
- Cook about 40 minutes (until the foil has fully swelled.
- Serve the fish with a drizzle of olive oil.
Tips…
- You can substitute white wine with any alcohol that combines with your fish. The anise-like flavors are especially interesting, but it is also surprising to add a dry, white vermouth.
