Ingredients for 4 people:
- 1 small onion
- 100 g butter
- 20 g extra virgin olive oil
- 200 g boneless chicken breast or leg
- 100 g cured ham
- 100 g strong flour
- 800g milk
- Salt, pepper
- Nutmeg
- Sweet paprika
- Oil for frying
For the batter:
- Flour
- Egg
- Bread crumbs
Preparation:
- Put the onion in the mixing jar and blend on speed 10, 5 seconds.
- Add the butter and oil.
- Select “sauce”, speed 2, 105 degrees, 4 minutes.
- Add the chicken and ham.
- Select “sauce”, speed 4, 100 degrees, 7 minutes.
- Add the flour. Select “willow” speed 4, 60 degrees, 5 minutes.
- Drizzle with the milk. Season with salt, pepper, nutmeg and paprika.
- Select “sauce”, speed 4, 100 degrees, 9 minutes; until the dough comes off the jar.
- Pour the croquette dough into the pan on a baking sheet or cling film. Cover with cling film (it should stick to the dough) so that a hard layer does not form on top.
- Chill the dough in the fridge for about 12 hours to give it body.
- Make balls of 40 grams of dough, roll them in flour, beaten egg and breadcrumbs. Finish shaping them into croquettes by pressing the balls with your fingers.
- Fry them in fairly hot oil so that the batter does not open up. Drain before serving on absorbent paper.
