Ingredients for 4 people:
- 50 g of butter
- 1 kg of pears
- 30 g of currants
- Pinch ground cinnamon
- 15 g of sugar
- Ground cinnamon
- Butter to spread on the mold
- Whipped cream to serve
- Ingredients for the dough:
- 100 g of sugar
- 100 g of flour
- 100 g of ground almonds
- a pinch of salt
- 100 g of cold butter
Preparación:
- Put the sugar, flour, almonds and salt in the mixing jug.
- Mix on speed 2, 2 minutes.
- Add the butter – cold – cut into pieces and mix with the rest of the ingredients at a speed of 2, 2 minutes, until you get a kind of coarse semolina.
- Wrap the dough in film. Form a cylinder and cool in the fridge or freezer.
- Put the butter in the jug. Cook at speed 1, 40 degrees, 1 minute.
- Peel the pears and remove their core.
- Put them into the jug cut into quarters and cook at SL speed, 80 degrees, 6 minutes.
- Mix in the raisins, sugar and cinnamon. Cook at speed 1, 80 degrees, 6 minutes.
- Grease an oven safe pan with butter. Place a pear base on top.
- Take the dough from the fridge or freezer and grate on top of the pears.
- Cook in the preheated oven at 180 degrees, about 20-25 minutes or until the crumble dough is golden brown.
- Serve the warm crumble, accompanied with whipped cream.
