Ingredients for 4 people:

  • 150 g buckwheat flour
  • 2 eggs
  • 120 ml of water
  • 150 ml milk
  • Salt
  • 1 tablespoon of extra virgin olive oil
  • Oregano

Preparation:

  • Mix the buckwheat flour with the eggs in the mixing jug at speed 4, 20 seconds.
  • Add the water, milk and oil. Season with salt and oregano, and grind at speed 4, 2 minutes.
  • Let the covered dough rest in the refrigerator for about 30 minutes.
  • Heat a large griddle or nonstick skillet. Pour a little dough and spread it on its surface.
  • Flip it over when it the bottom side is golden.
  • Serve them hot with the fillings you like best: from sweets like chocolate or jams, to hot preparations like ham with melted cheese, roasted bell peppers and aubergines with goat cheese, and pulled pork with honey or maple syrup. You can add an egg when you flip them over to let the other side cook.

Tips…

  • Buckwheat flour is gluten-free, making it suitable for gluten intolerants.
  • If you want, you can substitute milk for water and also prepare them for lactose intolerants.
