Ingredients for 4 people:

  • 150 g buckwheat flour
  • 2 eggs
  • 120 ml water
  • 150 ml milk
  • Salt 1 tablespoon of extra virgin olive oil
  • Oregano

Preparation:

  1. Mix the buckwheat flour with the eggs in the mixing jar on speed 4, 20 seconds.
  2. Drizzle with the water, milk and oil. Season with salt and oregano and select “pastry”, speed 4, 2.5 minutes.
  3. Let the pastry rest covered in the refrigerator for about 30 minutes.
  4. Heat a large griddle or non-stick frying pan. Pour a little of the batter and spread it over the surface.
  5. Turn when golden brown.
  6. Serve warm with your favourite fillings: from sweet, like chocolate or jams; to hot, like ham with melted cheese, roasted peppers and aubergines with goat’s cheese, pulled pork (roasted and boneless pork ribs) with honey or maple syrup. You can add an egg when turning them and let it cook while the bottom side is frying.

Tips…

  • Buckwheat flour is gluten-free, so it is suitable for coeliacs.
  • If you want, you can replace the milk with water and prepare them also for lactose intolerant people.
