Ingredients for 4 people:
- 300 g cheese spread
- 1 egg yolk
- 1 whole egg
- Salt
Pasta ingredients:
- 200 g of strong flour
- 2 eggs
- 1 tbsp olive oil
Preparation:
For the filling:
- Carefully place the blade guard in the mixing jar. Add the cheese and egg yolk and mix on speed 1, 40 seconds. Set aside.
For the pasta:
- Place the ingredients in the clean mixing jar with the blade protector on. Select “pastry”, speed 4, 2.5 minutes.
- Repeat the programme for a further 2.5 minutes.
- Remove the dough from the mixing jar and leave to rest for 20 minutes wrapped in cling film or under a damp cloth.
- Roll out the dough very thinly, either with a rolling pin or a fresh pasta machine. Cut into discs about 7 cm in diameter.
- Place 1 teaspoon of cheese filling in the centre. Brush the edges with beaten egg and close like a patty.
- Take the ends of the patty and press them together to seal them.
- Heat 1 litre of salted water in the mixing jar with the blade guard on speed 0, 120 degrees, 5 minutes.
- Add some tortellini and cook at speed 0, 100 degrees, 1 minute.
- Drain with a spider strainer or skimmer and repeat the operation.
- Serve with a sauce or add a drizzle of oil to prevent sticking.
Tips…
- You can steam the tortellini if you wish.
- If the tortellini are not for immediate use, it is preferable to freeze them so that they do not become deformed.
