Chicken Soup

Ingredients for 1 l of broth:

  • 400 g chicken thigh
  • 1 small onion
  • ½ carrot
  • 50 g leek
  • 50 g celery
  • 2 mushrooms
  • 1/2 clove
  • White peppercorns
  • 1200 g of water

Preparation:

  1. Wash the chicken. Place it in the mixing jug with cold water to cover. Heat, SL speed, 120 degrees, until the water starts boiling.
  2. Drain it with the steamer basket and wash it. Reserve it.
  3. Place the onion and carrot in the glass. Shred them, speed 8, 7 seconds.
  4. Take them out of the glass.
  5. Put the celery, the leek and the mushrooms in the glass. Crush them, speed 5, 5 seconds.
  6. Incorporate all the ingredients in the glass. Cook, SL speed, 90 degrees, 40 minutes.
  7. Strain the broth with the steamer basket.
  8. Salt it before use.

Tips…

  • You can use this broth to make a soup with pasta, to incorporate it into a cream or as a cooking liquid for rice.
