Spinach Fritters

Buñuelos de espinacas

Ingredients:

  • 300g frozen spinach
  • 50 g of smoked bacon
  • 20 g pine nuts
  • 1 clove garlic
  • 20 g raisins
  • 230 g of water
  • 45 g of butter
  • 16 g of salt
  • Pinch of pepper
  • 184 g of strong flour
  • 4 eggs
  • Olive oil for frying

Preparation:

  1. Thaw the spinach, drain them tightly with your hands and set aside.
  2. Put the bacon in the glass. Cook it, speed 4, 100 degrees, 3 minutes.
  3. Add the pine nuts, the peeled garlic and the raisins. Cook, speed 4, 100 degrees, 30 seconds.
  4. Add the spinach. Cook at speed 4, 120 degrees, 5 minutes.
  5. Add the water and butter. Cook, speed 4, 120 degrees, 3 minutes.
  6. Salt pepper.
  7. Mix the flour and crush, speed 3, 2 minutes.
  8. Let the preparation cool down a bit and add the eggs one by one, crushing at a speed of 3, 30 seconds between each one.
  9. Remove the dough from the mixing jug and fry the fritters in plenty of olive oil over medium heat so that they cook inside.
  10. Drain on absorbent paper and serve hot.
