Ingredients for 1l:
- 80 g of butter
- 65 g of flour
- 1 l. milk
- Salt, white pepper, nutmeg
Preparation:
- Place the butterfly accessory in the mixing jug.
- Heat the butter – diced – on speed 1, 60 degrees, 2 minutes.
- Add the flour and cook at speed 1, 65 degrees, 4 minutes.
- Incorporate the milk and season with salt, pepper and a pinch of nutmeg.
- Cook at speed 1, 95 degrees, 5 minutes.
Tips…
- This Bechamel has an optimal texture for making cannelloni au gratin. If you need it to be thicker for another preparation, simply increase the amount of flour and butter (in equal parts) for the same amount of milk in the recipe.
