Tatziki (Yoghurt & Cucumber Sauce)

Ingredients for 4 people:

  • 250 g cucumber
  • Salt
  • 1 garlic
  • 30 g fresh mint
  • Extra virgin olive oil
  • White pepper g
  • 400 g yoghurt

Preparation:

  1. Peel the cucumber. Cut it in half and remove the seeds with a spoon. Salt the cucumber and leave to stand for 10 minutes.
  2. Add the peeled garlic and mint leaves to the jar.
  3. Press “pulse” for 2 seconds. Repeat until completely chopped.
  4. Wash the cucumber and add it to the jar. Blend on speed 4, 5 seconds.
  5. Season with the oil and pepper. Add salt and mix in the yoghurt by hand with the spatula.

Tips…

  • Tzatziki is ideal with meats – chicken, pork, lamb – either on its own or in a pita with lettuce and vegetables.
  • You can also use the sauce as a salad dressing.
