Patatas Bravas Sauce

Patatas Bravas

Ingredients:

  • 300 g ripe tomatoes
  • Salt
  • 100 g extra virgin olive oil
  • Red wine vinegar
  • Tabasco sauce
  • Hot paprika

Preparation:

  1. Place the halved, seeded tomato in the blender.
  2. Blend on speed 4, 4 seconds.
  3. Strain the tomato with the inner basket and let it drain well.
  4. Place the tomato pulp in the jar. Salt it.
  5. Cook on speed 4, 120 degrees, 7 minutes.
  6. Drizzle with a splash of vinegar and season with a few drops of Tabasco and the hot paprika.
  7. Finish blending the sauce – now cold – by pressing “pulse” a couple of times.

Tips…

  • Cook peeled and diced potatoes in oil over medium heat until soft. Set aside.
  • Just before serving, fry over high heat until golden brown. Drain on absorbent paper, drain and serve with the sauce.
