Mayonnaise

Ingredients:

  • 2 eggs or 120 grams of milk
  • 20 g lemon juice
  • 10 g vinegar
  • 10 g salt
  • 500 g sunflower oil

Optional:

  • 1 tsp Dijon mustard.

Preparation:

  1. Place the eggs, lemon juice, vinegar and salt (optional mustard) in the mixing jar. Blend on speed 10, 10 seconds.
  2. Unplug the pouring hole in the middle of the mixing jar lid (without removing the plug completely).
  3. Gradually pour the oil through the hole in the lid while continuing to blend on speed 10.

How to whip up a cut mayonnaise:

  1. Remove the mayonnaise from the mixing jar.
  2. Add one egg or 60 g of milk to the jar. Add a pinch of salt.
  3. Blend on speed 10 and proceed to pour in the chopped mayonnaise – a little at a time – just as you have added the oil.
