Ingredients for 2 people:
- 50 g shallots or onions
- 50 g carrots
- 50gr turnip
- 50gr courgette
- 50gr leek
- 50gr mushrooms
- Salt, black pepper
- 400 g filleted sea bass
- 50 ml. dry white wine
- Fresh basil
- Extra virgin olive oil
Preparación:
- Put the shallot, carrot and turnip into the jar, peeled and coarsely chopped.
- Blend on speed 8, 6 seconds.
- Add the courgette, leek and mushrooms. Blend on speed 8, 5 seconds.
- Cut a piece of aluminium foil twice the size of the steamer base. Place it on top of the steamer basket.
- Season the vegetables and fish with salt and pepper and arrange them on the foil. Place a bed of vegetables on top and the fish on top.
- Carefully pour in the white wine.
- Place a few basil leaves on top of the fish.
- Close the paper tightly over itself so that the fish and vegetables are trapped inside.
- Place 500ml of water in the jar. Select “steam”, with the nozzle open and the steamer on top.
- Cook for about 40 minutes (until the foil has completely puffed up).
- Serve the fish with a drizzle of olive oil.
Tips…
- You can substitute white wine with any alcohol that matches your fish. Aniseed flavours are particularly interesting, but it is also surprising to add a dry white vermouth.
