Ingredients for 4 people:

  • 50 g butter
  • 400 g milk
  • 3 eggs
  • 200 g flour
  • Salt

Optional:

  • 1 finely grated orange, lemon or tangerine peel.
  • Butter for baking the crêpes.

Preparation:

  1. Place the butter in the mixing jar. Cook on speed 1, 120 degrees, 3 minutes.
  2. Add the milk and eggs to the mixing jar, blend on speed 8, 15 seconds. Add the flour to the mixture through the nozzle, on speed 3.
  3. Salt and, optionally, add the citrus zest.
  4. Leave the dough to stand in the fridge for half an hour.
  5. Heat a non-stick frying pan. If the pan is not non-stick, you can melt a knob of butter in it.
  6. Add a little batter and swirl the pan to distribute it evenly.
  7. Cook over low heat until lightly browned and turn.
  8. The second side of the crêpes takes less time to cook.
  9. Remove the crêpe from the pan and serve with the filling of your choice:
  10. Sugar, cinnamon, homemade jams, chocolate coating, nuts, cheese spread, maple syrup, canned tuna with bechamel sauce…
