Taramasalata

Ingredients for 4 people:

1 kg of peeled potatoes
Salt
200 g of breadcrumbs
1 medium onion
300 g of tarama (fish roe)
1 clove garlic
Juice of 2 lemons
220 g olive oil
110 g of sunflower oil
Vinegar
Parsley
Kalamata olives

Preparation:

  1. Place the peeled and medium sliced ​​potatoes in the glass mixing jug.
  2. Add a glass of water and a pinch of salt. Cook at SL speed, 100 degrees, 20 minutes.
  3. Drain the water with the steamer and add the wet breadcrumbs.
  4. Crush at speed 4.5 minutes. Set aside.
  5. Place the onion, fish roe and garlic in the mixing jug. Grind at speed 5, 2 minutes.
  6. Add the mashed potatoes with the breadcrumbs and the juice of the lemons. Grind at speed 4, 2 minutes.
  7. Pour the two types of oil through the mouth of the jug, continuing to beat until the mixture is consistent.
  8. Season with a little vinegar.
  9. To serve: sprinkle a little parsley on top and serve with the olives.
