Ingredients for 4 people:

  • 325 grams of wheat flour
  • 3 eggs (L)
  • Salt, white pepper
  • Nutmeg
  • 200 grams of water
  • Butter

Preparación:

  1. Place the butterfly in the mixing jug.
  2. Add the flour. Season with salt and pepper and a pinch of nutmeg.
  3. Stir at speed 2, 30 seconds.
  4. Add the eggs and repeat the operation for 1 minute.
  5. Open the mixing jug a little and stir at speed 4. Add the hot water little by little through the nozzle.
  6. Knead 1 minute until all the liquid is incorporated.
  7. Let the dough hydrate for a few minutes. Remove it from the mixing jug.
  8. Place the dough in a späetzle press and pour them over boiling water with a pinch of salt. Wait for them to rise to the surface and wring them out.
  9. Sauté them with butter before serving.

Tips…

  • Use them as a garnish for meat stews such as Goulash
  • Serve them au gratin with cheese.
