Ingredients for 4 people:
- 325 grams of wheat flour
- 3 eggs (L)
- salt, white pepper
- Nutmeg
- 200 grams of water
- Butter
Preparación:
- Put the butterfly accessory in the mixing jar.
- Add the flour. Season with salt and pepper and a pinch of nutmeg.
- Select “pastry”, speed 2, 12 minutes.
- While kneading, add the eggs – one at a time – through the mixing jar.
- When the eggs have been incorporated into the dough, gradually add the hot water through the center aperture of the jar lid.
- Continue the programme until you obtain a homogeneous dough.
- Leave the dough to hydrate for a few minutes. Remove from the mixing jar.
- Place the dough in a späetzle press and pour over boiling water with a pinch of salt. Wait until they rise to the surface and drain.
- Sauté in butter before serving.
Tips…
- Use them as a garnish for meat stews such as Goulash.
- Serve them au gratin with cheese.
