Ingredients:
250 g flour
5 g of salt
125 g of butter
1 egg or 60 g of water
Opcional:
- A little butter to grease the mold
Preparation:
- Put the flour and salt in the mixing jug. Crush at speed 1, 15 seconds.
- Add the butter very cold and cut into pieces, and crush at speed 6, 10 seconds.
- Add the egg or water and crush at speed 7, 10 seconds.
- Remove the dough carefully and wrap it with plastic wrap
- Let it rest in the fridge so that it takes shape again for at least 15 minutes before using it.
Tips…
- Roll out the dough between two sheets of baking paper.
- Place it in a cake pan with the two baking papers (one on the base and one on top).
- Fill the inside of the mold with dried pulses (with their weight they will prevent the dough from swelling). Pre-cook the dough in the oven at 180oC. 15 minutes. Pre-cooking will make the dough crunchier when you add the filling.
- Add the filling you want to the pastry and, if necessary, finish cooking.
