Shortcrust pastry

Ingredients:

250 g flour
5 g of salt
125 g of butter
1 egg or 60 g of water

Opcional:

  • A little butter to grease the mold

Preparation:

  1. Put the flour and salt in the mixing jug. Crush at speed 1, 15 seconds.
  2. Add the butter very cold and cut into pieces, and crush at speed 6, 10 seconds.
  3. Add the egg or water and crush at speed 7, 10 seconds.
  4. Remove the dough carefully and wrap it with plastic wrap
  5. Let it rest in the fridge so that it takes shape again for at least 15 minutes before using it.

Tips…

  1. Roll out the dough between two sheets of baking paper.
  2. Place it in a cake pan with the two baking papers (one on the base and one on top).
  3. Fill the inside of the mold with dried pulses (with their weight they will prevent the dough from swelling). Pre-cook the dough in the oven at 180oC. 15 minutes. Pre-cooking will make the dough crunchier when you add the filling.
  4. Add the filling you want to the pastry and, if necessary, finish cooking.
