Ingredients for 4 people:
- 1/2 clove of garlic
- 300 to 400 ml of dry or fine white wine
- 350 grams of grated Gruyère cheese
- 350 grams of grated Swiss emmental cheese
- Ground pepper
- 4 c.s. cornstarch
- A splash of kirsch
- 1 bread (500 or 600 g) round Telera or Village
Preparation:
- Put the peeled garlic into the mixing jug. Shreds speed 7, 20 seconds.
- Add the white wine. Heat it speed 1, 70 degrees 5 minutes.
- Add the grated cheeses mixed together and a pinch of pepper.
- Bake at speed 3, 70 degrees, 7 minutes
- Dilute the cornstarch with the kirsch and add it.
- Heat up, speed 3, 90 degrees 3 minutes.
- Open the bread from the top, empty it and cut the pieces of the bread crumb into cubes.
- Fill the inside of the bread and wet the pieces of the crumb.
Tips…
- Corn starch stabilizes the mixture and prevents it from cutting.
- You can substitute the cheeses for others that work well such as Vacherin, Appenzell, Sbrinz or Tilsit.
