Ingredients for 4 personas:

  • 1200 g ripe tomatoes
  • 150 g extra virgin olive oil
  • 20 g salt
  • 40 g sugar

Optional for the hot soup:

  • Black pepper
  • 100 ml cream

Preparation:

  1. If you want to serve the soup cold:
  2. Clean the tomatoes and blend them with the rest of the ingredients on speed 10, 5 minutes.
  3. Serve the soup cold, optionally with a pinch of pesto.
  4. If you want to serve the soup hot:
  5. Clean the tomatoes, cut them into quarters and press “pulse” 5 seconds.
  6. Add a drizzle of oil and select “soup”, 25 minutes.
  7. Once the programme has finished, season with salt, pepper and add the cream.
  8. Press “pulse” 5 seconds to mix the cream and serve the soup immediately.

Tips…

  • You can accompany the cold soup with some prawns sautéed in olive oil and seasoned with a little salt and pepper.
