Ingredients for 4 people:
- 130 g green pepper
- 45 g red pepper
- 560 g ripe tomato
- 20 g onion
- 1 clove garlic
- 175gr cucumber
- 16gr toasted almonds
- 80gr dried breadcrumbs
- 16gr salt
- white pepper
- 320gr water
- 40gr vinegar
- 130gr extra virgin olive oil
Preparation:
- Place the seeded peppers, the tomato cut into quarters, the onion, the peeled garlic and cucumber, the almonds and the bread in the mixing jar.
- Season with the salt and a pinch of pepper and blend on speed 10 for 5 minutes.
- Drizzle with the water, vinegar and oil and blend again on speed 10, 5 minutes.
- Serve with a garnish of toasted (or fried) bread, pepper, cucumber, onion and tomato cut into small cubes.
Tips…
- Gazpacho is a very refreshing dish. It is usually eaten in summer. It helps to quench your thirst because the vegetables contain a high percentage of mineral salts.
- You can prepare variations of gazpacho such as cherry or watermelon gazpacho (replace the tomato or part of it with watermelon. Change the oil and vinegar for mayonnaise).
