Coconut Carrot Cream

Ingredients for 4 people:

  • 500 g. peeled carrots
  • 40 g. of butter
  • Sunflower oil
  • 500 g. of water
  • Salt
  • White pepper
  • 250 g coconut milk
  • Lime peel

Preparation:

  1. Peel the carrots. Cut them into quarters and grind them in the mixing jug at speed 6, 15 seconds.
  2. Cook them, along with the butter and a drizzle of oil on speed 4, 120 degrees, 5 minutes.
  3. Dip in the water. Salt and pepper and cook at speed 4, 100 degrees 15 minutes.
  4. Add the coconut milk and cook an additional 3 minutes.
  5. Let the whole cool and just crush the cream.
  6. Serve cold or warm with a little grated lime peel on top

Tips…

  • If you do not have coconut milk, you can substitute it with cream or a pinch of cheese for spreading.
