Ingredients for 1 l of broth:
- 400 g chicken thigh
- 1 small onion
- ½ carrot
- 50 g leek
- 50 g celery
- 2 mushrooms
- 1/2 clove
- White peppercorns
- 1200 g of water
Preparation:
- Wash the chicken. Place it in the mixing jug with cold water to cover. Heat, SL speed, 120 degrees, until the water starts boiling.
- Drain it with the steamer basket and wash it. Reserve it.
- Place the onion and carrot in the glass. Shred them, speed 8, 7 seconds.
- Take them out of the glass.
- Put the celery, the leek and the mushrooms in the glass. Crush them, speed 5, 5 seconds.
- Incorporate all the ingredients in the glass. Cook, SL speed, 90 degrees, 40 minutes.
- Strain the broth with the steamer basket.
- Salt it before use.

- You can use this broth to make a soup with pasta, to incorporate it into a cream or as a cooking liquid for rice.
