Crème brulee

Ingredients for 4 people:

  • 500 ml milk
  • 100 g of sugar
  • 1 orange peel
  • 1 lemon peel
  • 1 cinnamon stick
  • 4 egg yolks
  • 25 g cornstarch

Preparation:

  1. Heat in the mixing jug at speed SL, 80 degrees, 8 minutes, 400 ml of milk – with a little sugar, lemon peel, cinnamon, orange peel.
  2. Cover and let infuse the whole mixture for 15 minutes.
  3. Strain with the steamer basket and put aside the milk.
  4. Place the butterfly accessory.
  5. Put the yolks, the rest of the sugar and the cornstarch in the mixing jug, beat on speed 2, 1 minute.
  6. Incorporate the rest of the cold milk and mix at speed 3, 1 minute.
  7. Add the infused milk and cook on speed 3, 100 degrees, 9 minutes.
  8. Distribute the cream in casseroles and let cool.
  9. Just before serving, caramelize with a little sugar.
