Crème brulee

Ingredients for 4 people:

  • 500 ml milk
  • 100 g sugar
  • 1 lemon peel
  • 1 cinnamon stick
  • 4 egg yolks
  • 25 g cornflour

Preparation:

  1. Put the blade guard on.
  2. Put 400 ml of milk – with a little of the sugar -, the lemon peel, the orange peel and the cinnamon into the mixing jar.
  3. Select “sauce”, speed 1, 80 degrees, 8 minutes.
  4. Leave to infuse, covered, for 15 minutes.
  5. Strain through the inner basket and reserve the milk.
  6. Put on the butterfly accessory.
  7. Add the egg yolks, the rest of the sugar and the cornflour to the mixing jar.
  8. Beat on speed 2, 1 minute.
  9. Add the rest of the cold milk and mix on speed 3, 1 minute.
  10. Add the infused milk and select “sauce”, speed 3, 100 degrees, 9 minutes.
  11. Pour the cream into ramekins and leave to cool.
  12. Just before serving burn some sugar on top until caramelized.
