Guacamole

Ingredients for 4 people:

  • 1 thin tender onion
  • 1 ripe tomato
  • 2 avocados
  • 50 g of extra virgin olive oil
  • 25 g of lime juice (or 1/2 lemon)
  • Salt
  • Tabasco
  • Coriander leaves

Opcional: 

  • 50 g of water
  • nachos

Preparation:

  1. Remove the roots and the first layer of the onion. Put it in the mixing jug cut into quarters. Crush it at speed 5, 3 seconds.
  2. Remove it from the jug and set it aside.
  3. Remove the peduncle from the tomato. Cut it in half and remove its seeds. Place them in the jug and grind them at speed 3, 7 seconds.
  4. Remove them from the jug and set them aside.
  5. Add the peeled and pitted avocados, the oil, the lime juice, a pinch of salt, a few drops of Tabasco, and some coriander leaves. Crush them at speed 8, 3 minutes.
  6. If it is too thick, you can add the water and crush again for 30 seconds.
  7. Add the onion and tomato and mix them by hand with the spatula.
  8. You can serve the guacamole with some nachos, or you can use it to spread on toasts, fill vol-au-vents or mini tartlets.
