Ham and chicken croquettes

Ingredients for 4 people:

  • 1 small onion
  • 100 g butter
  • 20 g extra virgin olive oil
  • 200 g boneless chicken breast or leg
  • 100 g cured ham
  • 100 g strong flour
  • 800g milk
  • Salt, pepper
  • Nutmeg
  • Sweet paprika
  • Oil for frying

For the batter:

  • Flour
  • Egg
  • Bread crumbs

Preparation:

  1. Put the onion in the mixing jar and blend on speed 10, 5 seconds.
  2. Add the butter and oil.
  3. Select “sauce”, speed 2, 105 degrees, 4 minutes.
  4. Add the chicken and ham.
  5. Select “sauce”, speed 4, 100 degrees, 7 minutes.
  6. Add the flour. Select “willow” speed 4, 60 degrees, 5 minutes.
  7. Drizzle with the milk. Season with salt, pepper, nutmeg and paprika.
  8. Select “sauce”, speed 4, 100 degrees, 9 minutes; until the dough comes off the jar.
  9. Pour the croquette dough into the pan on a baking sheet or cling film. Cover with cling film (it should stick to the dough) so that a hard layer does not form on top.
  10. Chill the dough in the fridge for about 12 hours to give it body.
  11. Make balls of 40 grams of dough, roll them in flour, beaten egg and breadcrumbs. Finish shaping them into croquettes by pressing the balls with your fingers.
  12. Fry them in fairly hot oil so that the batter does not open up. Drain before serving on absorbent paper.
