Ingredients for 4 people:
- 2 cloves of garlic
- 250 g water
- 300 g crumbled desalted codfish
- 125 g butter
- 1 tbsp chopped parsley
- Salt and pepper
- 250 g of strong flour
- 4 eggs
- Oil for frying
Preparation:
- Place the peeled garlic in the jar. Blend it, speed 4, 15 seconds.
- Pour the water into the jar
- Select “sauce”, speed 1, 80 degrees, 5 minutes.
- Add the cod.
- Repeat the programme, 10 minutes.
- Add the butter and select speed 4, 2 minutes.
- Add the parsley and blend, speed 7, 20 seconds.
- Stir in the flour. Select “pastry”, speed 3, 3 minutes.
- Season with salt and pepper.
- Leave the mixture to cool for 2 minutes uncovered.
- Select “pastry”, speed 3, 3 minutes.
- Add 1 egg through the nozzle.
- Repeat with the remaining eggs as they are incorporated into the batter.
- Remove the dough from the mixing jar.
- Fry small balls of dough in a deep pan with hot oil.
- Drain the fritters on absorbent paper.
