Ingredients for 4 people:
- 1 small onion
- 100 g of butter
- 20 g of extra virgin olive oil
- 200 g of boneless chicken breast or thigh
- 100 g of cured ham
- 100g strong flour
- 800g milk
- Salt pepper
- Nutmeg
- Sweet paprika
- Oil for frying
For the batter:
- Flour
- Egg
- Bread crumbs
Preparation:
- Put the onion in the mixing jug, mash it at speed 10, 5 seconds.
- Add the butter and oil and heat, speed 1, 100 degrees, 5 minutes.
- Add the chicken and ham. Shred at speed 4, 100 degrees, 7 minutes.
- Add the flour. Cook, speed 4, 60 degrees, 5 minutes.
- Dip with the milk. Season with salt, pepper, nutmeg and sweet paprika.
- Cook, speed 4, 100 degrees, 9 minutes; until the dough comes off the glass.
- Pour the croquettes dough into the tray on a base of baking paper or plastic wrap. Cover it with plastic wrap (it must be adhered to the dough) so that a hard layer does not form on it.
- Let the dough cool in the fridge for 12 hours so that it takes on body.
- Make balls of about 40 grams of dough; pass them through flour, beaten egg and breadcrumbs. Finish shaping the kibble by pressing the ball with your fingers.
