Ingredients for 4 people:
- 500 ml milk
- 100 g of sugar
- 1 orange peel
- 1 lemon peel
- 1 cinnamon stick
- 4 egg yolks
- 25 g cornstarch
Preparation:
- Heat in the mixing jug at speed SL, 80 degrees, 8 minutes, 400 ml of milk – with a little sugar, lemon peel, cinnamon, orange peel.
- Cover and let infuse the whole mixture for 15 minutes.
- Strain with the steamer basket and put aside the milk.
- Place the butterfly accessory.
- Put the yolks, the rest of the sugar and the cornstarch in the mixing jug, beat on speed 2, 1 minute.
- Incorporate the rest of the cold milk and mix at speed 3, 1 minute.
- Add the infused milk and cook on speed 3, 100 degrees, 9 minutes.
- Distribute the cream in casseroles and let cool.
- Just before serving, caramelize with a little sugar.
