Onion Soup

Ingredients for 4 people:

  • 300 g pearl onion (dried)
  • 25 g olive oil
  • 25 g butter
  • 1 l. chicken stock
  • Fresh thyme
  • 125 g artisan bread
  • Salt, black pepper


Preparation:

  1. Place the peeled and quartered onion in the jar along with the oil and butter. Cook on speed 1, 120 degrees, 10 minutes.
  2. Drizzle with the stock, season with the thyme and select “soup”, 30 minutes.
  3. Add the bread, thickly sliced and toasted.
  4. Cook on speed 4, 90 degrees, 5 minutes.
  5. Season with salt and pepper and serve the soup hot.

Tips…

  • Place the soup in ovenproof individual pots. Arrange 1 slice of bread on top. Sprinkle with cheese and bake au gratin just before serving.
