Ingredients for 4 people:
- 50 g butter
- 1 kg pears
- 30 g currants
- A pinch of ground cinnamon
- 15 g sugar
- Ground cinnamon
- Butter to grease the mould
- Whipped cream for serving
- Ingredients for the dough:
- 100 g sugar
- 100 g flour
- 100 g ground almonds
- Pinch of salt
- 100 g cold butter
Preparación:
- Prepare the dough:
- Place the sugar, flour, almonds and salt in the mixing jar.
- Mix on speed 2 for 2 minutes.
- Add the butter – cold – cut into small pieces and mix with the rest of the ingredients on speed 2, 2 minutes, until you obtain a kind of “coarse semolina”.
- Wrap the dough in cling film. Form into a cylinder and store in the fridge or freezer.
- Place the butter in the mixing jar.
- Select “sauce”, speed 1, 60 degrees, 1 minute.
- Peel the pears and remove the cores. Put them in the jar, cut into quarters, and select “sauce”, speed 1, 80 degrees, 6 minutes.
- Mix in the currants, sugar and cinnamon.
- Select “sauce”, speed 1, 80 degrees, 6 minutes.
- Brush a baking dish with butter. Place a base of pears on top.
- Grate – with a grater – the cold dough on top of the pears.
- Bake in a preheated oven at 180 degrees Celsius for 20-25 minutes or until the crumble is golden brown.
- Serve the crumble warm, accompanied with whipped cream.
