Ingredients for 4 people:
- 500 ml milk
- 100 g sugar
- 1 lemon peel
- 1 cinnamon stick
- 4 egg yolks
- 25 g cornflour
Preparation:
- Put the blade guard on.
- Put 400 ml of milk – with a little of the sugar -, the lemon peel, the orange peel and the cinnamon into the mixing jar.
- Select “sauce”, speed 1, 80 degrees, 8 minutes.
- Leave to infuse, covered, for 15 minutes.
- Strain through the inner basket and reserve the milk.
- Put on the butterfly accessory.
- Add the egg yolks, the rest of the sugar and the cornflour to the mixing jar.
- Beat on speed 2, 1 minute.
- Add the rest of the cold milk and mix on speed 3, 1 minute.
- Add the infused milk and select “sauce”, speed 3, 100 degrees, 9 minutes.
- Pour the cream into ramekins and leave to cool.
- Just before serving burn some sugar on top until caramelized.
