Salsa Satay

Ingredients:

  • 2 red chillies
  • 125 g peeled peanuts
  • 2 shallots or sweet onions
  • 1 garlic clove
  • 8 almonds
  • lemon juice
  • 200 g coconut milk
  • 1 tablespoon brown sugar
  • 1 boiled potato
  • Salt

Preparation:

  1. Soak the chillies in warm water for 30 minutes.
  2. Add the peanuts and cook on speed 1, 100 degrees for 6 minutes.
  3. Add the drained chilli, shallots, garlic, almonds and lemon juice.
  4. Select “sauce”, speed 4, 100 degrees, 5 minutes.
  5. Stir in the coconut milk, sugar and, optionally, the cooked potato for texture. Cook and continue with the same programme for an additional 2 minutes.

Tips…

  • Use the sauce to accompany grilled or barbecued chicken kebabs.
  • You can incorporate the Satay into a Pad Thai.
  • If you want a more intense flavour and colour, roast the peanuts in the oven at 160 degrees.
