Taramasalata

Ingredients for 4 people:

  • 1 kg of peeled potatoes
  • Salt
  • 200 g breadcrumbs
  • 1 medium onion
  • 300 g tarama (fish roe)
  • 1 clove of garlic
  • juice of 2 lemons
  • 220 g olive oil
  • 110 g sunflower oil
  • Vinegar
  • Parsley
  • Kalamata olives

Preparation:

  1. Place the peeled and finely chopped potatoes in the jar.
  2. Add a glass of water and a pinch of salt. Cook at speed 0, 100 degrees, 20 minutes.
  3. Drain the water with the steamer and add the moist breadcrumbs.
  4. Blend on speed 4, 5 minutes. Set aside.
  5. Place the onion, fish roe and garlic in the mixing jar.
  6. Blend on speed 5, 2 minutes.
  7. Add the mashed potatoes with the crumbs and the juice of the lemons. Blend on speed 4, 2 minutes.
  8. Pour in the two types of oil through the center aperture of the lid while whisking until the mixture is well blended.
  9. Season with a little vinegar.
  10. To serve: sprinkle a little parsley on top and serve with the olives.
