Ingredients for 4 people:
- 1 kg of peeled potatoes
- Salt
- 200 g breadcrumbs
- 1 medium onion
- 300 g tarama (fish roe)
- 1 clove of garlic
- juice of 2 lemons
- 220 g olive oil
- 110 g sunflower oil
- Vinegar
- Parsley
- Kalamata olives
Preparation:
- Place the peeled and finely chopped potatoes in the jar.
- Add a glass of water and a pinch of salt. Cook at speed 0, 100 degrees, 20 minutes.
- Drain the water with the steamer and add the moist breadcrumbs.
- Blend on speed 4, 5 minutes. Set aside.
- Place the onion, fish roe and garlic in the mixing jar.
- Blend on speed 5, 2 minutes.
- Add the mashed potatoes with the crumbs and the juice of the lemons. Blend on speed 4, 2 minutes.
- Pour in the two types of oil through the center aperture of the lid while whisking until the mixture is well blended.
- Season with a little vinegar.
- To serve: sprinkle a little parsley on top and serve with the olives.
