Ingredients for 4 people:
- 2 cloves of garlic
- 250 g of water
- 300 g of crumbled desalted cod
- 125 g of butter
- 1 c.c. chopped parsley
- Salt and pepper
- 250 g of strong flour
- 4 eggs
- Oil for frying
Preparation:
- Place the peeled garlic in the mixing jug. Shred it, speed 4, 15 seconds.
- Pour the water into the glass. Heat up, speed 1, 80 degrees, 5 minutes.
- Add the cod. Heat up, speed 4, 80 degrees, 10 minutes.
- Add the butter and heat, speed 4, 2 minutes.
- Add the parsley and mash, speed 7, 20 seconds.
- Add the flour, speed 2, 2 minutes.
- Salt pepper.
- Add 1 egg. Mix, speed 2, 20 seconds.
- Repeat the operation with the rest of the eggs.
- Remove the dough from the jug.
- Fry small dumplings in a deep bowl of hot oil.
- Drain the fritters on absorbent paper.
