Ingredients for 4 people:
- 325 grams of wheat flour
- 3 eggs (L)
- Salt, white pepper
- Nutmeg
- 200 grams of water
- Butter
Preparación:
- Place the butterfly in the mixing jug.
- Add the flour. Season with salt and pepper and a pinch of nutmeg.
- Stir at speed 2, 30 seconds.
- Add the eggs and repeat the operation for 1 minute.
- Open the mixing jug a little and stir at speed 4. Add the hot water little by little through the nozzle.
- Knead 1 minute until all the liquid is incorporated.
- Let the dough hydrate for a few minutes. Remove it from the mixing jug.
- Place the dough in a späetzle press and pour them over boiling water with a pinch of salt. Wait for them to rise to the surface and wring them out.
- Sauté them with butter before serving.

- Use them as a garnish for meat stews such as Goulash
- Serve them au gratin with cheese.
