Mushroom Royale

Ingredients for 4 people:

  • 1 large onion
  • Extra virgin olive oil
  • 600g mushrooms
  • Salt, black pepper
  • 220 g of Béchamel
  • 160 g of cream
  • 16 egg yolks
  • Butter to spread on the molds

Opcional:

  • Nutmeg, cinnamon and coriander seeds

Preparation:

  1. Place the peeled and quartered onion in the mixing jug.
  2. Crush it at speed 7, 5 seconds. Repeat the operation.
  3. Add a splash of oil and cook at speed 4, 120 degrees, 5 minutes. Put aside.
  4. Add the mushrooms to the mixing jug. Crush at speed 7, 30 seconds. Add a little oil and cook on speed 4, 120 degrees, 5 minutes. Salt pepper.
  5. Remove 2/3 of the mushrooms from the glass jug and set them aside with the onion.
  6. Add the Béchamel, the cream and the yolks to the mushrooms in the mixing jug. Season with salt, pepper and, optionally, ground nutmeg, cinnamon and coriander seeds.
  7. Spread some butter in 4 individual flan molds. Fill them with the mixture in the mixing jug. Cover them with plastic wrap and place them in the steamer basket with the lid.
  8. Fill the mixing jug with 500 g of water. Place the steamer and cook at SL speed, 120 degrees, 30 minutes.
  9. Let the royales cool slightly before removing them from the mold.
  10. Serve with the onion and mushroom stir fry.
