Onion Soup

Ingredients for 4 people:

  • 300 g pearl onion (dry)
  • 25 g olive oil
  • 25 g of butter
  • 1 l. chicken broth
  • Fresh thyme
  • 125 g of artisan bread
  • Salt, black pepper


Preparation:

  • Place the peeled and quartered onion in the mixing jug along with the oil and butter. Cook at speed 1, 120 degrees, 10 minutes.
  • Dip with the broth, season with the thyme and cook the whole, speed 1, 90 degrees, 30 minutes.
  • Add the bread cut into thick slices and toasted.
  • Cook speed 4, 90 degrees, 5 minutes.
  • Add salt and pepper and serve hot soup.

Tips…

  • Place the soup in oven-safe casserole pots Lay 1 slice of bread on top. Sprinkle with cheese and grill in the oven just before serving.
