Ingredients for 4 people:
- 500 g. peeled carrots
- 40 g. of butter
- Sunflower oil
- 500 g. of water
- Salt
- White pepper
- 250 g coconut milk
- Lime peel
Preparation:
- Peel the carrots. Cut them into quarters and grind them in the mixing jug at speed 6, 15 seconds.
- Cook them, along with the butter and a drizzle of oil on speed 4, 120 degrees, 5 minutes.
- Dip in the water. Salt and pepper and cook at speed 4, 100 degrees 15 minutes.
- Add the coconut milk and cook an additional 3 minutes.
- Let the whole cool and just crush the cream.
- Serve cold or warm with a little grated lime peel on top
Tips…
- If you do not have coconut milk, you can substitute it with cream or a pinch of cheese for spreading.
